2+Su = Happiness!

In waltzes 2 charming girls from Tennessee into Su's lonely American life.
For months we've hung out to share, laugh, dance and sing...
Not long after... my darling neighbours made their way into my quiet little home; filling it with vibrant southern cheer~
So how does Su welcome her new roomies?
Food!
*sigh* what else is there to my life... hehe

Aubergine pasta bake with spinach and ricotta cheese


1 fresh aubergine (brinjal) sliced 1/2 cm thick
1 bag fresh spinach diced
1 cup ricotta cheese
2 tbsps olive oil
1 onion sliced thin
3 cloves garlic diced
1 bottle tomato base pasta sauce
500gms minced pork/chicken (optional)
2 cups shredded mozzarella
2 tsps oregano flakes
2 cups cooked pasta; drained
salt and pepper

Saute onions, garlic and meat(opt) with olive oil for 2 minutes. Pour in pasta sauce and add herbs; bring to a boil, mix in spinach leaves, cook for another 2 minutes. season with salt and pepper.
Layer baking dish with cooked pasta; spinach sauce aubergine slices and ricotta cheese. Top with shredded mozzarella. Bake for 20 minutes; till cheese is melted and deliciously bubbly!
Katie; resident 'song-bird' has just raced out the door to have a run in the rain. *laughs* She better be back soon to get ready before we head out dancing to Motown music tonight!


The girls are amazing... they've filled my life here in America with exciting new adventures and new discoveries to look forward to. It's incredibly nice to come home to someone for a change.

Sounds REALLY yummy!!! When do you put the aubergine in?... Do you saute it with the other veggies or do you wait and layer it in with the casserole to bake in the oven? Keep on blogging, dear lady! I visit you almost every day just to "hear your voice"... you love life, food, friends & learning so much that it lights up every word! ^_^ Aloha! Laurel
