First comes the DREAM; then the PURSUIT!

I'm ready...
Ready to chase the Dream;
To follow the passion towards greater things; magnificent sweets and delectable cakes!

Su is flying to the United States of America in 2 days! She is going to pursue her love for the art of Sugarcrafting.

2 months ago; everything was a blurry haze of dreams, wants and maybe's....
But after many spontaneous decisions;...

Today; it is official;
I'm joining The NotterSchool of Pastry Arts for an intensive 6 month course in European Pastry!
The most encouraging and inspiring 22nd birthday gift from my parents to their baby daughter; The opportunity to shine!
The chance to do what she loves everyday!
To make it her career!
The thought of all that is mind blowing for me.

Sending me all the way to Orlando Florida to study pastry for 24 weeks took them lots of sacrifice; considering how they've missed their little girl in Sydney Australia for 4 years already. I have just completed a degree in Construction+Property Management and now with barely a month spent at home; I'm already packing up again to head for a different continent at the other end of the world.
I wouldn't say the 4 years was a complete waste of time or money. The degree has taught me so much about growing up; and being responsible for my own future. My 4 years learning about structure and physics in support systems has no doubt aided my cake sculpting techniques as well!

I do realize how hard it is going to be for me, considering my short 4 days to adapt to the new lifestyle and 12hours in time difference before classes begin on the 7th of January 2008.
I'm overwhelmed and incredibly excited!

I hope you guys are too!
Can you imagine the things I will creating with proper training and professional advice!

Many of you may be thinking; Why Florida? WHy not France? Switzerland? ...pastry in Europe? WHy America?
Well...I have my reasons; but I'll leave those stories for another time.
I can't wait to share with everyone the goodies ill be whipping up in the US!
I'll have to make sure my rented apartment has a kitchen well equipped with an oven and the lot! *giggle*

I think you will do fine in Florida. It's really a nice place and has nice weather!What advice do you want? I will try and help if u need. good luck and have a safe journey traveling..time difference it overated..don't worry about that you will get used to it..LOL

Wow...this certainly is very very exciting!

I've been following your blog since my sister told me about you and I really really love your creations. When you said you were coming back Malaysia, I DID thought to myself: "Mmm...maybe we might just get to see your creation in real life or better still...taste it ourselves!" but alas...you're going off again so soon but looking forward to your pursuit of such an exciting thing to learn! Really happy for you. :D

One thing kinda tickles me though... *giggle* ...you mention in your recent post that your utensils and cake decorating gear are still being shipped back and now you're off already...oh noes~

Your blog has always been very fun too read, and very inspiring. The fact that you generously give out tips and recipes make me love you even more :P ...so do keep up updated about your adventures in Florida. Good luck!

Aww, you will love it in the States. I just moved to the States (in Texas currently) after 14 years in Sydney, definitely a life-changing experience and you are very lucky to experience it!
You will do great here, especially there are so many different types of ingredients available here in comparison to Australia :-)
I should really pay you a visit in FL, since it's not too far from TX. I definitely want some of your delicious cakes!

Congratulations! I have been a fan of your blog for a while now, from here in the American heartland (chilly Wisconsin!). Several years ago I worked for an advertising agency and we did some work for the hospitality industry. Orlando has a lot of convention facilities and it seems to attract trade shows/conventions/chef competitions, etc. related to the hospitality industry. So if you have the chance and inclination to do some networking, it's a good place to be. Good luck!

Congrats! What a wonderful way to start 2008!
Am formerly Msian, now living in Toronto, Canada. Been to Orlando several times. Make sure u go visit Disneyworld, plus take time to visit Cape Canaveral, not only to see the NASA but also to go down to the beach front to enjoy the incredible and cheap seafood. Also, u'll LOVE the shopping in the US. I've been to Aust a few times and I know how expensive everything is. It's much cheaper than Canada too! Bring empty suitcases when u come over! Btw, outside of Orl are quite a few good Chinese restaurants and also asian grocery stores eg. Ranch 99. Have a ton of fun!!

Hi Su Yin! I was asked to do cupcakes for a group of colleagues consisting of males and females. I had the idea of doing shirt and tie thingy for the guys and the ladies of cute little dresses.
