Peaches+Cream Mini Bundt Cupcakes

I purchsed an an elegant and pretty...but ridiculously HEAVY muffin-bundt tray a couple of days ago. Despite my rush to finish studying for my exams on Thursday, I just couldnt wait to give them a little test drive!
I whipped up the quickest sponge cake recipe I knew by heart, threw in a handful of diced peaches I had leftover from my strudel, gave it a good stir and into the oven it went! Didn't take much effort, but they came out smelling and tasting absolutely fabulous! I didn't care much for extravagant frosting... the idea of Peaches+ Cream is just 'peachey' on its own *licks lips* YUm!

What's a Strawberry doing with 'Peaches and Cream' you ask? It misses it's cream too *wink* :)

Edit: Recipe for the basic cupcake batter, Add in a handful of diced peaches to this + about 1/2 cup of the syrup from the peaches.
60g butter
1/2 cup castor sugar
1 tsp vanilla essence
1 egg
3/4 cups Self Raising Flour
1/4 cup milk.

Wow...Suyin..these Cupcakes are realli so gorgeous. I bet they taste wonderful. You really got a wonderful mould it these cupcakes...

thanks ellena, i think theyre really pretty too! tasted better than they look actually! haha...
I know its hard to get pretty baking equipment and a good variety of ingredients back in Malaysia. Singapore is a little better....but nothing beats having a huge range of almost EVERYTHING here in Australia....its a cook's paradise! haha...I'm already starting to have a dilemma with shipping my stuff home after im done studying next year! LOL

Yup.. I totally agreed with you Suyin, there are alot of varities of bakeware and ingredients over in aussi.... During my 2 yrs stay over there, i also bought back alot of bakeware and cookbooks which we can't really get in singapore... May i know which brand is the muffin tin that you bought. It's really something new that i never seen b4....

Jaclyn: I've editted the post wiht the recipe for you, but that's just an approximate! Haha I bake vanilla cupcakes so much that I dont need a written recipe anymore. So I'm not sure if thats the exact proportions.

how exactly do u mix all the ingredients? do u juz put everything into the bowl and mix? or is there like a step-by-step instruction?

Hi cas... sorry about the vague instructions. Beat the butter and sugar. Add in the egg and essence. beat well. fold in sifted flour and milk. :) Hope that helps
