Well.. the good news is; My exams @ uni are over....*grin* *straps apron back on!*
Su's been busy in her kitchen....I prep-ed our cozy lil' townhouse for a 21st party last night~ ...the cake was fab ;); wait for pictures up in my next post...probably in another couple of days.
Here's one of the many things we had for the 20 plus friends of the birthday boy;Its always good to have melt and mix recipes when you're making 3-4 recipes at once. Especially if you do your whipping and beating with a mini hand mixer like me! I feel your pain *laughs*
Here's the recipe for everyone to try.
Really sweet and ripe bananas work very well with this recipe. The peanut butter icing isn't a 'must'....but the peanut butter is!!! Try spreading a generous layer of smooth peanut butter on top of warm muffins before serving...it's what makes this lil precious banana filled morsel sensational!
I made em' pretty with sprinkles of dessicated coconut and dried banana chips.
This recipe makes 12 medium sized muffins
2 Large ripe bananas
1/2 - 3/4 cup caster sugar
1 large egg
90 gms melted butter
1 cup self raising flour
(1/2 cup roughly chopped walnuts)- if you like

Mash bananas with sugar, beat in the egg and butter, fold in the flour. Pour into muffin cases and bake in preheated 180 degree oven for 20-23 minutes until muffin tops are golden and cooked through. Allow to cool slightly on wire rack.
1 cup smooth peanut butter
1/4 cup condensed milk
3/4 cup icing sugar
1/4 cup condensed milk

Beat till smooth; ... frost warm muffins! *licks spoon*
I'm working on a second cake for tonight right now...will have pics up for that as well ...by tomorrow?...*cheeky grin*...I hope at least; haha too much partying for su...I'm getting to old for this s***! :P

Anyway, hui hui; 1 cup capacity should hold exactly 250ml's
and the decorative bits arent marzipan, I hate the taste of marzipan..lol..they're fondant (sugar paste decorations)
