Hummingbird cupcake recipe...

.... as promised,
Sorry bout the hold up guys; *guilty* It's week 6 at Uni; and assignments are throwing me off my regular routine.

This recipe makes 9 large cupcakes
I made these for Jackie's birthday beach picnic 2 weeks ago; they turned out moist, banana-ful and o-so-yummy! It's best paired with cream cheese frosting (made with beaten Philadelphia cheese + milk + vanilla + icing sugar to taste); but I'm open to suggestions if anyone else comes up with something a little more interesting.

1 3/4 cups self raising flour
1 cup dark brown sugar
1/2 cup dessicated coconut
1 tsp bicarb of soda
1 tsp ground cinnamon
1 (440g) canned pineapple (crushed)
2 large sweet+ripe bananas (mashed)
3/4 olive oil (light preferably)
2 large eggs


Combine all dry ingredients in a large bowl. (Sift the flour before hand) Make a well in the center; drop in all other ingredients and mix with a wooden spoon till well combined. Spoon into cupcake cases till 3/4 full and bake in preheated 180 degree oven for 35-40 minutes or until skewer comes out clean wen poked thru the center. Cool completely before frosting.

IFor the icing, will the icing go bad if you leave it at room temperature since it is cream cheese? or will it be ok if you leave if at room temperature from your experience?
