It took quite abit...

to sink your teeth into my stale tasting..rock-like *ahem*..'cakes'. *laughs*
but he ate them... with a smile.
Happy Fathers Day Pa!Mom, Jie (sis) and I would like to wish you a Very HappY Father's Day with a kiss and a hug for the many years of putting up with our excessive spending and senseless, frustrating quarrelling. We hope through all of that; you've had fun along the way :) You have to admit...we've been pretty good kids *wink* :P

Dad was probably the only one brave enough to encourage my early escapades in the kitchen. He often picked out "safe" (fire/heat- not required) recipes for me to play with. They never really turn out like in the pretty pictures...*pout*... sis would sly away from me offering her a piece! *laughs* Dad would come home .....give it a weird face...and willingly eat a slice; with sis watching curiously from afar. If nothing drastic happened; she would try a slice too! *sigh* I miss those days...
well ...dad, I'm better now..I promise...my cakes don't chip teeth anymore hehee..
Here's something I came up with quickly in the kitchen this evening. It's made up of everything dad loves. His favourite cookie...and his favourite nuts; almonds and walnuts.... Lightly toasted of course ;)

Pa; I know you said last night...
"don't worry about baking anything..or drawing cards this year; exams come first"....
...but I couldn't resist! plus; its a good way for me to procrastinate *grin*

Nutty cookie bar~
1 cup crushed digestives biscuits (4-5 slices)
1/2 cup melted butter

1 cup oats
1/4 cup brown sugar
2 heaped tablespoons smooth peanut butter

1/4 cup whole almonds + 1/4 cup whole walnuts toasted in the grill lightly (5-10 minutes)
2 cups good quality milk chocolate buttons melted (Zap in the microwave on high for 60 seconds-stir well to melt thoroughly)

A handful of white chocolate chips (optional)

Mix oats, cookie crumbs and sugar with the melted butter. Press firmly into a 2x5 inc rectangular container lined with baking paper. Randomly smear on the peanut butter and top with melted chocolate. Arrange toasted nuts on top and sprinkle with chocolate chips if you like. Leave to set in the refrigerator for at least 5-6 hours before slicing.
