I remember standing next to mom 2 weeks ago; in front of a large dressing table mirror, where we both were getting ready for dinner. I asked her; "Remember years ago when I was 15 and you had to hassle sis and I to put lipstick on when we went out for dinners?"...
It's been awhile since. I expressed my fear of life catching up with me...and the many worries I had with responsibilities ahead. She smiled and consoled me; assured me that it isn't going to be as bad as presume and explained to me how everything will be alright; its how life evolves naturally and how I'll have to accept it as it happens.
I was enlightened...it was exactly what I needed to hear.That's why I love my mommy. She speaks to me in ways I understand. She cares for me exactly the way I want to be loved. She couldn't be any more perfect.
If it was my daughter saying to me that she's beginning to feel old; I'd be busy freaking out at the number of mother's days I've celebrated! *laughs*

1 chicken breast (cubed into 2cm chunks)
1 can Campbell chicken soup (Use Chicken+mushroom if you like)
1 large potato diced into 1 cm cubes
1 onion (diced)

Pick 1-2 of these extras to throw in:
- 1 can corn kernels
- handful of sliced button mushrooms
- 1 small leek sliced thinly
Lightly oil a deep pan,throw in all the ingredients and toss about on high heat till chicken is partially cooked. (2-3 minutes). And now for the secret ingredient ....

Pour filling into a pie dish or a simple shallow Pyrex bowl. Leave to cool for a few minutes while you prepare pastry.

Pop pie in the oven for 20-25 minutes till pie pastry is puffed and golden.
Eat right away!! I usually dig straight into the dish.
