B.I.G cookies...

I turned a recipe for a batch of 16 large cookies...into 5 ridiculously HUge ones.
Why!? you ask; *Shrug* I was craving for a big-BIg cookie during my 2 hour lunch break from Uni and I was in quite a hurry to get to the next class on time. Instead of spooning neat drops of cookie dough on to baking sheet; I decided to just make gigantic round circles and left more space for them to spread. You can tell I was in one of my "lets do this and see what will happen!" moods.
They turned out great! I brought some to class with me fresh out of the oven. It's sometimes nice to be able to share something large with a couple of friends. We each broke pieces off the humongous cookie and nibbled away. Little treats are cute and dainty,( example; cupcakes, mini muffins, candies and lollies, etc) but these enormous monstrosities are something different! Tempting and sinfully delicious! Perfect for the greedy chocoholic! *wink*
Oh! and did I mention how it makes your kitchen smell when youre done baking?! mmMMmHhHhh * floats into chocolate heaven*
130g dark chocolate melted
1 cup plain flour sifted
1/4 cup cocoa powder
1 tsp bicarb of soda
1 pinch salt
1 egg
90g butter
3/4 cup dark brown sugar
1 tsp vanilla essence
Beat sugar and butter till creamed and well combined. Drop in the egg and vanilla essence. Continue to beat on high till fluffy and pale. Sift in dry ingredients and melted chocolate. Mix the dough with a wooden spoon till ingredients are incorporated - you'll need a fairly strong arm for this.
Drop spoonfuls of cookie dough onto baking tray lined with greaseproof paper and bake in preheated 190 degree oven for 15-20 minutes or until the corner of the cookie are cracked.(this will depend on the size of you cookie as well). The centers will still be moist. Remove them from the oven and leave to cool for 10-15 minutes before removing from cookie sheet.
If you want other treats scattered on top; like what I've done with my cookies, randomly sprinkle them and press them lightly into the cookie dough before popping them in the oven.
Here are some ideas:
  • Marshmallows
  • walnuts
  • pecans
  • chocolate chips
  • chocolate buttons
  • toffee
  • coarsely chopped white chocolate

Those cookies look scrunptious... baked to perfection! I can hear the crack noise when you have to snap a piece to give it to your friends...yummy!!!!

oh wow, you are such a passionate baker. i mean, you ran back home to bake during ur 2hrs lunch break? haha. i'd be taking a very long lunch break, chatting away and eating those really yummy carrot cake from QUAD store!

dills: haha I couldnt possibly stay at uni for 2 hours wiht nothing to do...carrot cakes at the QUAD are YUM!! especially the frosting! MmM hahaha..

if i don have those electric mixer,is it possible to make any of ur cookie/cakes?..as in beating by hand?

Hey gracie,
I think baking is possible without the mixer, but it just requires alot of patience and a strong arm to keep beating the sugar and the butter till its pale and well combined. Use a large balloon whisk and make sure the butter is soft when you're beating, to make it a lot easier on the arm ;)
I took the tag board off! There was too much spam, and readers kept asking the same questions over and over again after the msges dissapeared....haha I should have a FAQ page.

hey alz..haha so many questions! LOL
Grab a wide knife. Use the back of the blade and push against a piece of flat chocolate bar.
If your worried about it being sharp etc. Try using any other metal tool with a thin hard edge.

I added almond nibs and I was wondering what's the difference with drizzling melted butter and mixing sugar and butter together first?

hmm su yin, isn't it beat sugar and butter first? error on ur recipe eh? hehhehe btw, I have no electrical mixer, so I always had to use the normal wooden spoon and whisker sigh.. but it's a good arm exercise haha
