60gms butter softened
1/4 cup sugar
1 tsp vanilla essence
1 large egg
3/4 cup self raising flour
1/4 cup milk
1 Cadbury Crunchie bar chopped into small crumbly bits
Cream the first 3 ingredients till light and fluffy. Gradually beat in the egg until well combined. Gently fold in sifted flour and milk in alternate batches. Lightly stir in chopped honeycomb.1/4 cup sugar

Spoon neatly into cupcake cases and bake in 180 degree oven till tops turn slightly golden.
Topping:
200gms melted milk chocolate + 2 tbsp cream (combine to create a smooth glossy mixture)
Spoon on top of cupcakes and sprinkle on crumbles of honeycomb / silver dragees.I made several cupcakes with dark chocolate topping for those who do not like their cupcakes too sweet.
Tip: break the egg into a small bowl and whisk it slightly. Do not break the entire egg into the bowl and start beating away; this will lead to a curdled mixture. Slowly pour the egg in a thin stream while the mixer is beating the batter consistently.
