Honeycomb cupcakes

I made these in advance for the party on Saturday. Fridays are usually killer-days at Uni for me and I would be tired flat if I tried to shop, prepare and cook for 20-odd people all in one Saturday afternoon. Recipe for 12 little cupcakes
60gms butter softened
1/4 cup sugar
1 tsp vanilla essence
1 large egg
3/4 cup self raising flour
1/4 cup milk
1 Cadbury Crunchie bar chopped into small crumbly bits

Cream the first 3 ingredients till light and fluffy. Gradually beat in the egg until well combined. Gently fold in sifted flour and milk in alternate batches. Lightly stir in chopped honeycomb.
Spoon neatly into cupcake cases and bake in 180 degree oven till tops turn slightly golden.
Topping:
200gms melted milk chocolate + 2 tbsp cream (combine to create a smooth glossy mixture)
Spoon on top of cupcakes and sprinkle on crumbles of honeycomb / silver dragees.
I made several cupcakes with dark chocolate topping for those who do not like their cupcakes too sweet.
Tip: break the egg into a small bowl and whisk it slightly. Do not break the entire egg into the bowl and start beating away; this will lead to a curdled mixture. Slowly pour the egg in a thin stream while the mixer is beating the batter consistently.
