Thank God for sweet grapes! ( Day 1)

The 5 day diet.

It hasn't even been 1/2 a day and I'm already fighting my cravings for a slice of bread! Haha. It's a good thing that bread wasn't on our grocery list last week!
Lunch:
An extremely bitter mixture of gourmet lettuce with a dash of balsamic vinaigrette and grapes. *sigh* the lettuce I bought at the supermarket this week was probably the worst I've ever tasted! Haha What a way to start the diet! If it weren't for the grapes; I probably would have starved all afternoon! *laughs*I popped over to my beloved gym in the afternoon for an hour of pilates; felt pretty good on the way home; but as I entered the kitchen to start off with dinner preparation, all hell broke loose!!! I couldn't contain my hunger as I chopped, diced and handled the chunks of meat and vegetables! Haha I had to grab a couple of carrot sticks and cashew nuts to calm my stomach down.

Dinner: Pan fried chicken breasts marinated in Tarragon served with roast pumpkin, steamed asparagus and a tomato based puree.
Meat:
3 slices chicken breast marinated with 2 tsp salt, dashes of pepper and 1 tsp chopped tarragon leaves.
Pan fry on a non-stick skillet till cooked thru. Set aside and keep warm.
Sauce:
1 onion sliced
3 cloves garlic chopped
2 large tomatoes

1 can tomato puree
1 tbsp capers
1 tsp sea salt
cracked pepper
tabasco sauce(comes in handy for something a little spicy)
Cook all ingredients in a deep non stick pan and simmer till tomatoes soften and sauce is thick. Season with salt and pepper. Spoon over cooked pieces of meat.
Butternut Pumpkin: Cook pumpkin chunks in a microwave steamer for 5-8 minutes. Remove and grill in preheated 200 degree oven for 15-20 minutes or until corners are brown and centers are soft.
Asparagus: Wash, drain and rub lightly with salt. Cook in the microwave for 3-4 minutes till bright green and tender.
Taste Verdict: wasn't as bad as the lunch; but I guess it tasted alright. I'm not a fan of 'light' meals and this was probably one of the best greaseless meal I've ever eaten. *sigh* I remember trying hard to resist reaching out to the bottle of olive oil to pour in a little drop, I could hear it calling to me!!! Half way through my cooking; I grabbed it and shoved it into the pantry out of sight! Haha..I think diets drives my screws a little loose!

This chicken looks very yummy... Not even look like you are suffering with this diet. What did you have for breakfast?

Go su yin, GO! I can't believe today's my first day of college and I skipped breakfast and lunch :D

I thoguht it sounded absolutely delicious. With all those greens who needs pasta or potatoes or rice? I wish you were my roommate so I could try your cooking!

xenia: I had yogurt and fruits for breakfast...and tons of snack meals in between! hahaha just nibbling on fruits and nuts the entire day

lex: hope it doesnt get you too tired though. I always eat breakfast cause I feel it gives me a boost in the morning. good luck with college!

hey helen; nice to hear from you,
The girls and I havnt exactly been starving much. I guess my part of the suffering comes more from the craving more than anything! haha I WAnt MY BREAD!!
We have carrots, broccoli, cucumbers and chinese vegetables on the menu thru the week. Just havnt gotten to them yet. I'm slowly working my way through all the vegetables stacked up in the fridge.
I guess i'm not expecting to loose any weight from 5 days of eating healthy. But i hope it'll help curb a little of my appetite and reduce my sugar and saturated fat intake.

I constantly try to have everthing in moderation, but I have a problem with cheating! Haha. I need to give myself a reason, like a challenge to force myself to say NO! My love for food supersedes the need to lose weight.-- which I personally feel is a badd..badd..thing
*sigh*
I hope my self discipline develops as I age.
