Lunch:
After a horribly bitter salad yesterday; I decided to make a fruit salad to give us all a break from greens. I chopped several types of fruit and tossed them into a large tub. I added a good squeeze of lemon juice and 1/2 a cup of fresh orange juice to make it tangy. The colors were beautiful and the many sweet random textures and sensations were SOOOoo satisfying. I just love how delicious it looked and the way every scoop tasted like a different combination of fruity flavors. *Confession: I dropped by a friends place in the afternoon as I ran my daily errands and as we were having a short chat and a good laugh; he whipped out a bag of my favorite irresistible "FAMOUS AMOS" cookies. I casually popped one into my mouth and chewed! *THE Horror!! Oh NO!!* As I was about to swallow; I thought about my diet and went absolutely nuts! *laughs*. I swallowed the half eaten cookie in my mouth and decided to accept the fact that I have "sin"-ed. I'll probably punish myself by forfeiting an extra piece of chicken or my favorite cup of yogurt tomorrow. *sigh* I deserve to be horse-whipped! LOL
Dinner: Fresh fish fillets parcels with crisp green beans and capsicum I loved it! Dinner was good! For a change; I was actually really happy with the meal. From the way it looked, smelt and ease of preparation. As compared to many low fat meals; I would consider this dish one of the champions.
flaky fish fillets marinated in ginger slices, shallots and dash of sea salt + pepper
lemon slices
2 sprigs fresh oregano
Lay lemon slices onto the fish. Wrap loosely in baking paper; making sure the sides are sealed to lock in the juices. Drizzle with a squeeze of lemon juice and bake in preheated 190 degree oven for 15-20 minutes or until fish is cooked thru. Open parcels gently and sprinkle fish with roughly chopped oregano to serve.Honey mustard dressing:lemon slices
2 sprigs fresh oregano
1 tbsp dijon mustard
1 tsp mustard seeds
1 tbsp pure honey
1 tbsp white wine vinegar
Whisk all ingredients and spoon over cooked fish fillets and vegetables.

why why whyyy are u on a diet??? it never worked for me...haha..not much patience...hehe anyway the fruit salad does look real yummy !! =)
