Layered Crepes

I've been feeling lethargic the past couple of days. It just isn't me to drag my feet about the house being unenergetic, but I seem to be tired all the time. I should really consistently start taking my vitamins again. Could it be the crappy weather? The shade of gloom outside is probably getting to me. I really dont know. I have still quite a bit of catching up to do with Uni and I guess being caged up at home by the rain helps me be more productive with my time.
On a random note, I DESPERATELY NEED A NEW CAMERA! 'hint' to daddy and mommy dearest. *grin* My current Casio Exlim is great; its slim, its light, looks good, takes great people portraits and have been very kind to me the past 3 years. However, my slim little darling does'nt provide me with auto focus or a good flash and can only take 2.0megapixel pictures. As much as I love it dearly, I find it frustrating when I can't take good pictures without bright sunlight (at night and when it rains) and climbing up a chair to elevate objects closer to the ceiling lights for a shot just makes me feel retarded. It drives me absolutely insane! Sorry lil camera, you have served me well...but I feel embarrassed of my photography skills when the pictures don't do the delicious looking food any justice. I shall await patiently for July; when my parents shall bestow upon me a new Sony Cybershot. *gets excited*
Back to the topic of food....a yummy stack of crepes were made to celebrate the tiny rays of sun peering from the dark clouds! YAY!
2 eggs
1 cup milk
3/4 cup flour
1 pinch salt
butter for greasing pan

Beat eggs and milk in a jug. Sift flour and salt into a bowl. Make a well in the center and pour in liquid mixture. Beat lightly till combined. Leave to rest for 30 minutes or more. Heat a flat based pan with medium heat and add a tiny dot of butter. Spoon in 1 1/2 tbsp crepe mixture and evenly spread the mixture in a circular motion with the back of the spoon. Start in the center. When brown on one side, flip and brown the other. Remove to a plate and make more.I layered my crepes with strawberry jam+fresh berries+melted chocolate+toasted walnuts.
However, there are infinite combinations of layers you could do. Here's a list to get the ball rolling;
  • Chocolate+bananas
  • Peanut butter + jelly
  • Ham and cheese
  • Roasted eggplant and mozzarella
  • Spinach and Feta crumble
  • Honeycomb and almonds
  • Roast chicken and pesto
