Chocolate + Malt

I still remember the first time I was introduced to Malt. A little Su yin was handed a steamy brown cup of Horlicks and the brat in me(which has now matured and disappeared with age *wink*); whined for my usual hot Milo chocolate drink. I wasn't given and option. I was forced to drink it, my mom assured me that its good and I took a reluctant little sip. I was convinced. Although it didn't taste anything like chocolate and it sure didn't smell like it; I liked it anyway! From there....I went on to discover my next Malt love affair; Maltesers! They were pretty rare in Malaysia, but now in Sydney; they are EVERYWHERE! YUM!
I decided it would be fun to make a batch of Chocolate malt cakes to match the honeycomb cupcakes for the party. I made about 18 little cupcakes and used the rest of the cake batter for a shallow round cake. Here is my recipe; feel free to play around with the proportions if you know what you're doing. I did that with my initial chocolate cake recipe to make sure the chocolate did not overpower the Malt flavour.
130gms caster sugar
120gms brown sugar
3 large eggs
20gms butter
3/4 cup milk
3 tbsp Horlicks powder
180gms plain flour
25gms cocoa powder
1tsp baking powder
1/2 tsp bicarb of soda

Beat first 3 ingredient until tripled in volume. Heat milk slightly in microwave (about 40 seconds on high) and melt butter and Horlicks in milk mixture. Pour this into batter and stir to combine. Sift the rest of the ingredients and gently fold through. Pour into desired tins/cupcake cases and bake in 180 degree oven.
