My carelessness never fails to amaze me! I'm not too certain how, but somewhere along the lines of fiddling with items in the fridge and moving the freezer thermostat; i managed to turn my yogurt into a chunk, milk into lumps and lettuce into a round green icicle! Frozen head of iceberg lettuce= not good. The leaves were wilted and not crisp anymore. My intentions for crisp greens in my sandwiches and nice crunchy chunks in my salads will have to be put aside till next week after our round of grocery shopping.
This is probably the only thing decent tasting dish I could make with soggy lettuce leaves.....chinese stirfry lettuce in shrimp broth and oyster sauce. It looks ridiculously unappealing, but it would be a sin to waste an entire ball of lettuce. I sneaked it in at dinner with an accompanying favourite of the house...chicken with hoisin sauce. Everything was eaten and plates were clean at the end of our 10 minute dinner, so i guess it didn't turn out as bad as I expected.
Here is the recipe for the stirfried lettuce: dice 2 garlic cloves, shallow fry in a non-stick wok together with a handful of tiny dried shrimp (available at oriental stores). Throw in the chunks of lettuce leaves and add 2 tsp of vegetable stock diluted in 1 tbsp of water. Stirfry and leave to simmer for 1 minute. Dish out. Top with a dollop of oyster sauce and crispy fried shallots.

mom ,you can also make soup with the frozen lettuce.
