A last minute masterpiece


I was informed this afternoon by my dearest "jie" (elder sister), that a friend of ours (Emily) is in Sydney, and that I was to meet up with her tonight. She's an air stewardess and she's leaving the next morning. Jie added one more very important detail; it was Em's birthday today. I rushed out to my faithful 24 hour gas station mart (across the street) for a tub of strawberries and promptly returned home to bake the first cake which came to mind. I whipped up a basic sponge batter and substituted the milk with a cup of baileys Irish cream. The cake came out smelling good. I shaped the cake with a round tupperware cap and a metal tin (which helped create the double tier effect).
If you're planning to recreate this on your own, the topping's recipe would just be half a block of Cadbury Dream and 3/4 cup of cream (pop into the microwave for 60 seconds...remove and stir till smooth) place the whole bowl into the fridge, and leave to chill for apprx 1 hour (do this while the cake is in the oven). Let the cake cool, and cut out into desired shape. pour chilled and stiff chocolate mixture onto the top and let it drip down the sides. Decorate with strawberries. YUMMY! (tip: having bits and pieces of little decorative items in the kitchen for cakes and cookies can be helpful when you're in a hurry; ex: sprinkles,nuts,cherries, etc.) these can be stored for quite some time and they help add a little pizzazz to whatever you're making)

Hi Su Yin,

I am amazed at all the cakes you decorated with marzipan or icing. Can you give a lesson on this? Share e.g. on the tips (solution to salvage mistakes), difficulties and "do's/don'ts" on this topic and how to store the cake while you spend time on moulding the cute little figurines etc etc....
What equipment you need to invest and how much do they cost?
