A week to myself...

I officially declared a 7 day break for myself....
This week; I wont be doing things I must...but things I want. For example..baking for fun; not just for sale....going shopping *sigh..I miss shopping* ..I'll be doing lots of Uni work I need to catch up on (yes..I actually want to do my assignments); I'll be flipping through many dust covered cookbooks I've bought but have yet to touch....and working on my blog (Answering emails month old emails....posting an FAQ; typing up order forms, setting up a watermark..and finally getting important template issues sorted).
It does sound like quite a bit to do on my week off huh? *laughs* well...*shrug* with a full time degree and business on the side; life hasn't been kind. It's been awhile since I've sat down and drank a nice cup of coffee..or took a stroll down to the sands; just cause. Just cause I want to...just cause I can.
I guess it comes with age..when you realize life isn't going to get any easier past your 20's. I'm ready for it though.
I just got off the phone with dad and mom...we chatted about a few post-graduation ideas. It's been getting me all hyped up now! *giggle* Sigh* I wanna bake cakes all my life...I don't want to be a baker, a pastry chef...or anything of the sort..
I want to be an artist. To create art from flour, eggs and sugar...A Cake Artist.

Well...we should all have ambitions. I have a big one! and I'm willing to put in the hours and effort to get there. I really hope this blog of mine will help me along the way.
Enough with the rambles of things in my future...back to more delicious recipes to share!
Here's one of those stir and bake beauties!
These bite sized coconut-y morsels of fruit are filled with bursts of tropical goodness!They aren't difficult to do..and kids would have loads of fun getting to dig in their playful little hands as well! This cookie recipe doesn't require butter or sugar; for a nice refreshing change...and if you would like to give it a healthy twist; I'd suggest to omit the white chocolate...reduce the dried fruit (not by too much) and add in a larger variety of nuts. They are quite nice without the chocolate too!

150 m passionfruit pulp (canned)- drain out the seeds and keep 80ml's for the cookies...the rest for the white choc
1/4 cup glazed ginger
1/2 cup glazed pineapple
1/2 cup dried papaya
1 1/2 cup course shredded coconut (not dessicated)
1 cup cornflakes (crushed lightly)
1/2 cup macadamia nuts
3/4 cup condensed milk

150gms melted white chocolate

Chop the fruits and nuts to create a big colourful jumble in a large bowl. The pieces need to stay fairly large and coarse to create a good bite in the cookie. Add in the passionfruit pulp, coconut, cornflakes, condesnsed milk...and stir. Make fairly flat 5cm diameter discs onto baking cookie sheets and bake in 180 degree oven for 12-13 minutes. The tips of the coconut should be browning slightly when done. Remove from oven and cool on tray.
To make the frosting; add the remaining passionfruit pulp to melted chocolate and stir to create a thick smooth mixture. Flip the cooled cookies over and spread the chocolate over the back. Make a squiggle marking with a fork and repeat with the rest of the cookies. Allow chocolate to set and harden slightly before serving (should take 1-2 hours).

Hi Suyin :) You ve 1 of the coolest blog on the net. Keep up the good work! I was wondering, when u said "not dessicated" Did u meant fresh coconut? Like those you use for abok2 Sago? Does this recipe keep well? Do i ve to keep it in the fridge or sumthing? Im planning to make this for Raya. Plz do clear my doubts. Thank you so so much.

Hey siti; im glad you're trying the recipes. I use grated dried coconut...dessicated coconut is usually too fine. If you can find coarse dessicated coconut; that will do too. :) hope that helps.
