"Breakfast" nuggets?

Definitely not chicken nuggets for breakfast! *giggle*...these are Chicken nuggets made from breakfast foods!Oats and cornflakes make a wonderful crisp coat for these tender juicy medallions of white meat. I've also tried using these on whole chicken pieces (such as drumsticks and wings) as well. The boneless variety still is my favourite though.
I've had class all day long today; another one to go from 6-9pm *tear*
Will catch up soon guys! I've got many cakes lined up to be posted; just haven't found the time. Plus I bet everyone's tired of my posts filled with all things sweet things. A post on savory food is a nice refreshing change :). Back to sweets tomorrow! *wink*

2 cups cornflakes (crushed slightly)
2 cups rolled oats
1 tbsp oregano flakes (tarragon if you like)
1/2 tbsp chili flakes (Optional: I added this to the oats for something different)
2 tsp sea salt
1/2 cup plain flour
1 egg (beaten)
1 large chicken breast sliced into bite sized chunks
1-2 tbsps oil to coat pan

Prepare 4 small bowls. Fill one bowl with oats+ 1/2 tbsp herbs, the other with cornflakes+1/2 tbsp herbs, one with the egg and the forth with the flour and salt. Toss each bowl to mix well and heat oil in pan. When oil begins to sizzle; coat a chicken piece in the order of flour, egg and cornflakes/oats and place in the pan. Repeat with the other chicken pieces. Pan fry on both sides till golden and chicken meat is cooked through.

I make something similar... I mix dijon mustard with bit of honey, and add chopped dill. I coat the chicken in this, then dip them in crushed cornflakes and bake. Really yummy! I like the oat idea though, so will try that next ime.
