Big Warm Wishes to Eddy~

It seems like just yesterday when I made Eddy a "Cheese" cake for his birthday. Time sure does fly when you're having fun. Despite having decided not to make cakes for every birthday party I'm invited to; I had to make something for Eddy.
Even if it was'nt a 'full-on' CAKE~ I had to at least turn up with a cheese-ey desert to make him smile. It was a lucky that I decided on the spontaneous gift;.....there wasn't a cake ready for Eddy when I arrived! *laughs* it's not a surprise birthday party without a cake to cut and candle to blow!With the absurb number of birthday posts I've had up recently...I'll soon need to change my blog phrase to "The Journal of the Girl who loves birthday parties" *giggle*

A huge group of us gathered at a Spanish restaurant in the City and waited patiently for the birthday boy to show up. I think he must have thought we all forgot his big 21st! ;)
Well...he certainly was surprised~ and I suppose, 'relieved' that none of us actually forgot *laughs*We sat down with our Sangrias and chow-ed down on spanish mushrooms, paellas; pizza's; garlic prawns and the lot! We finished off with my miserable little cake (which I made not expecting to feed so many). I made what he loved...cheese? *rolls eyes*
It might have been an overload of cream cheese for many at the party...but the birthday boy was in heaven, and I guess thats all that matters.
Imagine a cheesecake with the thinest layer of cookie base possible...a big pile of cheese over the top and thick gooeey chocolate fudge oozing out in between layers.Why is it a weird stack shape you ask....well I wanted to make a free-form cheesecake; without the conventional flat cake form...a layered 'pyramid' stacked form would blow the cheese layers out of proportion; therefore creating a "WOaH" cheese effect. *shrug* In my opinion at least...Here is the recipe if anyone wants to replicate this. I do warn you though...extreme cheese lovers only *wink*
6-7 slices digestive cookies (layed at the bottom of a cake board/serving tray)
1-2 digestives crushed lightly for dusting
2 blocks Philadelphia creamcheese
1/2 cup sweetened condensed milk warmed gently in the microwave for 20-30 seconds--> stir in 2 tsps gelatin and dissolve
1/4 cup castor sugar
1 tsp vanilla essence
2 tbsps whipping cream

Whip everything except the cookies with an electric mixer on high for 3-4 minutes or until sugar is dissolved and a firm thick mixture is formed. Leave in the refrigerator and make fudge.

3/4 cup whipping cream
2tbsps butter
1 1/2 cups good quality milk chocolate buttons / milk chocolate bar chopped into small chunks

Heat cream and butter in a microwave safe bowl for 1 minute till small bubbles form in warm mixture. Quickly add in chocolate and whip with a whisk till chocolate melts and a thick gooey sauce forms. Leave to cool slightly.

Spoon cheese mixture into piping bag and pipe cheese onto loose arranged cookies. Layer cheese with sprinkle of cookie crumbs and chocolate fudge. Finish with a good tall peak of cheese.
Refrigerate for another 30minutes before serving.

I had the thumbs up from many of them who had a slice of cake that night...but I personally didn't quite enjoy mine. I'm the cookie person when it comes to cheesecakes..*laughs* the chocolate fudge sauce was KiLLEr though! Must be the callebaut I used...*sigh* YUmm...

I'm done! *wipes hands*Who wants to lick the whisk?

connie: thanks so much for frequenting my blog, its nice to hear from readers, why don't u try these cheese cake, its not too hard and tastes good, remember the geliton though ;) it can get pretty warm in singapore.
