Congratulations Eddy~

The Cheese lover is graduating...It'll be a good idea to swap the garlands of flowers/graduation bears/ gifts etc. for a couple slices of chocolate cheesecake brownies huh?Congratulations on your graduation Eddy; It's the beginning of a very bright future.I could go on and on about how great you are and how much you mean to me...but I can't today; not in this particular post at least >.< Hehe... Life has been hectic for me; and so has it for you, I just wish we made more of an effort to keep in touch, to spend time...bum around...run the streets at night; just the way we used to.
I guess time and our separate lives have drawn us apart gradually, but I still do think of you every time I cook with cheese! Or when something in our house blows a fuse *giggle* LOL thanks Eddy for being there for us girls every time we need 'manly' help/advice. It's been many years and you're still the person we call when something goes wrong. Take it as a compliment; we miss you too much and find excuses to have you come over!~ ;) *grin*

Chocolate Cheesecake Brownie

150g butter + 300g good quality dark chocolate + 2/3 cup sugar(45-70% cocoa)
2 eggs
1 1/2 cup plain flour
1/4 cup whipping cream
1/4 cup sour cream
Melt butter chocolate and sugar in a large microwavable mixing bowl for 90 seconds in 30 second zaps. Stir well to create a smooth mix. Allow to cool for a few minutes. Whisk in the eggs and add in flour and creams. Mix with a wooden spoon to combine well.
1 pack Philadelphia cheese (250g)
1/3 cup castor sugar
1 egg
Whisk cheese and sugar in a mixing bowl with an electric mixer till smooth and fluffy. Add egg and beat briefly for 10-20 seconds till just combined.
Line an 8 inch square tin (I used a round cause I couldn't find my square *grin*) with greaseproof paper. Spoon in both batters alternately till pan is filled. Swirl randomly with the end of a chopstick and bake in preheated 180degree oven for 25-28 minutes in the middle shelf.Allow to cool for at least 1-2 hours before slicing. I popped mine in the fridge to make it easier to cut into little pieces.

These are best eaten in miniature portions as it can be a little too rich and dense for many. Well unless you're the biggest of dark chocolate brownies and cheese; I don't suggest you don't sink your teeth into a huge piece!

Hey Su Yin! I really just want to say a very big thank you to you for dropping by on my graduation. Also, your post has once again touched me and honestly, I do not think i will ever be able to reciprocate whatever you have done for me over these few years. Yea the last 2 years have just been Crazy but it has been fantastic nonetheless right? but We Must definitely go for some food again after this week. hehe Thanks Heaps!
